Hey Mom, What's for dinner?

These were good!

I am taking the cue from Kami's Mexican food blogpost today. I made "flautas" for dinner tonight. I went the easy way, so I used leftover roast beef. Here's the (little bit vague) recipe:

Leftover beef. If it is not tender, cook in beef broth (with the other ingredients) until it is.
Add:
1 tomatillo chopped (Remove paper first, of course)
1/2 cup chopped cilantro
1 1/2 tsp. cumin
some garlic powder
a tiny bit of onion powder
salt and pepper
some jalapenos ( just chop a few of the sliced ones in a jar.)
Some lime juice

Cook until meat is tender and broth has boiled off. Heat the corn tortillas in the oven at 350 for 10 minutes. Put about 2 TBL. meat mixture on tortilla and roll up tight. Secure with a toothpick and fry in about 1 cup hot oil until crispy. Drain. Serve with a touch of sour cream, lettuce and tomato.

Debbie, I asked Jen about your blog site after you mentioned in your Christmas letter that you were following hers.
Your dinner looks so yummy.
It was great to see old friends in the quilting picture. Everyone looks great.
